- 2 large ripe peaches
- 1/4 cup sugar
- 4 whole cloves
- 3 cinnamon sticks
- 1/3 cup cider vinegar
- 1/2 cup water
- 1 package instant vanilla pudding
- enough milk to make the pudding
- peel, seed, and quarter peaches
- bring water, cider vinegar, cloves, and cinnamon to a boil for a few minutes
- add peaches, return to boil
- simmer at low for 10 minutes
- make pudding, split into four serving dishes, refridgerate
- once the pudding has set in the dishes and the peaches are done, put 1 or 2 peach quarters into each dish (2 tastes much better, 1 is pictured)

While, yes, instant pudding is a bit of an abomination, and this would have been so much better with real pudding, we still had it in the cabinet and needed to get rid of it. 1/3 cup was probably too much vinegar as well, as the aftertaste was a little strong. It did add some good flavor, but less would have kept the peach taste more central.
