Peppermint Sun Tea
  • 2 quarts water
  • 5 Twinings peppermint tea bags
  1. Thoroughly wash a 2 quart glass jar.
  2. Drop in 5 tea bags.
  3. Fill with cold water, seal.
  4. Leave outside on the fire escape in direct sunlight for 4 hours.
  5. Refrigerate to cool.
  6. Serve with slices of lemon and a little honey.

In general, with sun tea, it’s necessary to check in on the tea to be sure it always stays in the sun, but as my fire escape faces south, this wasn’t an issue, and I didn’t need to move it at all. This should work with pretty much any herbal tea for a refreshing summer drink. I left the tea bags in the tea when I moved it into the refrigerator; some people think that’s a bad idea, but I figure since the tea steeped so delicately without the boiling water, this shouldn’t make much of a difference. I got rid of them a few hours later when we started drinking the tea.

One thing to note with sun tea is that it won’t keep, even in the refrigerator, for more than a few days. If it continues to be as hot here as it was last week, this definitely will not be a problem with this batch.
